We may be in September now, but summer is still here for at least a few more weeks. And we are definitely feeling good with temperatures in the 30’s in Toronto this week. This means that we can still eat all our favourite summer foods like ice cream, iced coffees, and watermelon. Watermelon so perfectly sums up summer for me.
A couple of weeks ago I hosted a party in my new house and at the and of the day I had quite a bit of watermelon left over. While I did scarf down many pieces, I decided to do something a bit different with the remainder. Here is my recipe for a really simple, yet delicious watermelon salad. Although it looks spicy, it really is not. The sriracha and jalapeno gives it a little kick, but the sweetness of the watermelon really stands out. Give it a try.
Sweet and Spicy Watermelon Salad
Ingredients:
Watermelon cut into bite sized pieces
1/4 Cucumber peeled and sliced
1/4 cup Dill
1/2 cup Red Onion
1 Jalapeno
2 tbsp Sriracha
1/4 Lemon Juice
1 tbsp Balsamic Vinegar
Salt and Pepper to taste
Directions:
Cut onion, dill, watermelon, cucumber, and jalapeno and combine in a large bowl.
Mix all other ingredients into a bowl. Make sure all parts are mixed well.
Pour over salad and mix well.
