Quinoa is an amazing source of protein, vitamins, and fibre. And by adding some veggies and some spices you have a hearty and yummy meal.
Quinoa Glow Bowl
1 Cup Quinoa
2 tsp Cumin and Coriander Spice
1 tsp Turmeric
2 Cloves Garlic Chopped
2 Handfuls Spinach
4-5 Stalks of Kale
1 Red Pepper Diced
1. Add Quinoa to 1 cup of boiling water. Lower heat, cover, and let simmer for 15 minutes. Remove from heat and let it sit covered for an additional 5 minutes. When all water has been evaporated, fluff with a fork. Add a teaspoon of the cumin to the quinoa and mix well.
2. In a large pan saute garlic in avocado oil. Add the turmeric and cumin/coriander spices. Add the Veggies and mix well.
3. Add the quinoa to the pan of veggies with a pinch of Himalayan salt and mix well.
4. Serve as a side or as a meal. I added a bit of hot sauce to mine to give it a nice kick.
