Today I have a quick kale stir fry for you that can be eaten as a side dish or on its own for a quick and light meal. This is actually a great post workout meal as it is high in protein and iron.
Ginger Kale Stir Fry
Kale Leaves from about 3-4 Stems
1/2 Red Pepper Chopped
1 Tablespoon Coconut Oil
1 Tablespoon Ginger-Garlic Paste
A Pinch of Himalayan Salt and Ground Pepper
A squeeze of Lemon
1. Heat coconut oil and ginger-garlic paste in a frying pan on medium heat
2. Put in red peppers first and saute for 3-4 minutes
3. Add kale leaves and saute until kale wilts
4. Add salt, pepper, and a bit of lemon juice
5. Stir well and Enjoy.
